Liven the senses this festive season with a blend of black tea featuring cardamom, cinnamon, cloves, ginger and black peppercorns
Crush the cardamom seeds in a pestle and mortar along with the cinnamon, cloves and peppercorns, to release the oils. You are not making a powder.
Tip into a pan and stir in the ginger and black tea leaves. Pour over 400ml of water and bring to a very gentle simmer over a very low heat.
Allow the tea to infuse before it starts to boil. Stir in the milk and sugar or syrup to taste, and remove from the heat.
Let stand for two minutes to infuse then strain into two mugs.
