Chicken & butterbean salad

A simple, fresh and healthy salad, quick to prepare making it perfect for hectic days
Chop the pepper, spring onion and chili into small pieces and place in a large bowl.
Drain the beans (any you are using) and add them to the mix.
In a frying pan heat a tablespoon of olive oil for a few minutes.
Chop the chicken breast into strips and season with salt and pepper. Cook through.
Serve the bean salad on top of the cooked chicken breast.
